Hard Red Winter Wheat

Hard red winter wheat accounts for 3 to 10 percent of total wheat acreage in North Dakota. Acreage can vary widely from year to year depending on growing conditions and crop rotations. Hard red winter wheat is a riskier crop to grow due to the severe weather conditions in the state. Producers are showing increased interest in winter wheat production as it can yield higher than spring wheat in some years and spreads out fieldwork.

Hard red winter wheat is a versatile wheat with excellent milling and baking characteristics for pan bread. It is also a choice for Asian noodles, hard rolls, flat breads, general purpose flour and as an improver for blending.
